The U-S-D-A says the state made 268-million pounds of cheese in January, an increase of one point nine percent from the same month in 2016. But Wisconsin is still not keeping up with the nation as a whole, as U-S factories boosted their cheese output with the help of a nearly 12-percent increase in New York State. Wisconsin’s biggest increase was for Italian cheese, while cheddar production dropped by almost four-percent.
